排骨炖大闸蟹的做法

【食材清单】
        大闸蟹 3-4只、排骨 500g、料酒 50克、盐 一汤匙、白糖 一汤匙、酱油 一汤匙、味精 适量、醋 一汤匙、葱 适量、姜 适量、蒜 适量
【烹饪步骤】

                                                             1.选购圆脐的大闸蟹(母的有红膏)3-4只,对半切开一分为二;
                                                               在切口部位粘点盐腌制一下。

                                                            2.排骨500克,剁成小块,在沸水中焯一下,捞出过水,沥干水份。

                                                            3.锅烧热,倒入油,煸香葱姜蒜,倒入排骨翻炒,煎至两面金黄,烹入料酒、酱油、白糖,
                                                            加入高汤或开水将排骨烧至可以脱骨,起锅,倒入砂锅内;

                                                          4.将腌制过的河蟹(大闸蟹、太湖蟹)放入带汤汁的烧排骨内,汤汁最好没过河蟹,
                                                         大火隔水炖10分钟,转小火焖5分钟。出锅前撒一点葱丝、胡萝卜丝点缀。
