大闸蟹炒年糕,加了郫县川香红油豆瓣酱,味道杠杠的!

[食材清单]
       
       阳澄湖大闸蟹 4只;年糕 200g;郫县川香红油豆瓣酱 1勺;大蒜 3瓣;;生姜 1个;
       洋葱 半个;小葱 1根;面粉 适量;色拉油 适量;盐 适量;白糖 1茶勺;料酒 适量;生抽 适量

[烹饪步骤]

                                                                1、准备好材料

                                                                 2、将葱姜等切段处理好

                                                               3.锅中倒入适量水,大火烧沸后将年糕放入,大火煮2分钟,捞出沥干水分待用;

                                                             4、将洗净的大闸蟹对半切开

                                                            5、将切好的大闸蟹沾少许干面粉,依次做完所有;(这样就不用担心过程中蟹黄流出来)

                                                             6、热锅到油,将大闸蟹切开面朝下,放入锅中

                                                           7、放入切好的葱姜蒜没加入适量的盐与白糖

                                                          9、加入一勺郫县豆瓣酱,翻炒一下

                                                        11、这时大闸蟹已经变成金黄色的啦!加入焯过水的年糕,洋葱,不停翻炒,以免年糕粘锅

                                                       12、至年糕软糯,汤汁浓郁,关火,撒入葱花,即可出锅!

                                              1、闸蟹沾少许干面粉,这样就不用担心烧制过程中蟹黄流出来啦! 
                                              2、螃蟹寒性,此做法有鲜香料葱、姜、蒜、辣椒,不但可去腥,更能驱寒。
                                              3、此菜鲜香微辣,掌握好咸度!
